Worked example

Scaling from 4 to 6 servings gives a factor of 1.5. Flour 2 cups becomes 3 cups, sugar 0.5 cup becomes 3/4 cup, and 3 eggs become 4 1/2.

Formula

Scale factor = target servings / original servings. Each scaled quantity = original quantity x factor, rounded to the nearest 0.25 for measuring spoons and cups. Seasonings, salt and leavening are often better adjusted to taste when scaling by more than 2x or less than 0.5x.

FAQs

Does cooking time change when I scale? Time depends on the size and thickness of what is in the pan, not the number of servings. A doubled batch in a bigger pan usually needs a similar time; check doneness as usual.

Why did my baking powder amount get a note? Leavening does not always scale perfectly linearly in very large batches. The quarter-rounding here keeps home-scale recipes (0.5x to 3x) measuring-friendly.
