Worked example
A 23 cm round pan at 5 cm depth holds pi x 11.5 squared x 5 = 2,077 ml. A 20 cm round pan at the same depth holds 1,571 ml. The volume ratio is 1571 / 2077 = 0.76, so make 76 percent of the batter, or scale every ingredient by 0.76.
Formula
Round pan volume = pi x (diameter / 2) squared x depth. Square = side squared x depth. Rectangular = length x width x depth. Batter scaling factor = your pan volume / recipe pan volume. One cup is 236.6 ml.
FAQs
What if the factor is above 1? Either make the full recipe and bake the extra batter as cupcakes, or scale up, keeping an eye on bake time: deeper batter takes longer and may need a slightly lower temperature.
Does depth really matter? Yes. Two pans with the same diameter but depths of 4 cm and 7.5 cm differ in volume by almost double. Measure depth, not just the top diameter, and note that many pans taper.
